The combination of oatmeal, peanut butter, chocolate chips and M&Ms makes for a filling cookie, and usually ensures that I don’t go overboard in one sitting. For me that’s no more than two or three. Sometimes I’m even happy with just one (not often though). There are a number of things I like about Monster Cookies and specifically about the recipe I’m currently using. First, you don’t have to cream the crap out of the sugar and butter to get soft cookies. I don’t have the patience to cream butter and sugar for more than a couple minutes, so my chocolate chip cookies are always hard. Which I like, but husband and daughter, not so much.
Second, you can mix it all up in one big bowl. Mixing it all in one bowl saves time and makes for less cleanup time, which I’m always for. Third, it’s got lots of chocolate in it with both chocolate chips and M&Ms. Fourth, the cookies don’t really spread out a lot when they bake, so there’s not a lot of guesswork when placing them on a pan.
Sunday’s batch was doubled, so we’ve had cookies all week long. Yum.
I also tried a new main course recipe last Sunday, and yes, it was chicken again. As I’ve mentioned previously, chicken seems to be my go-to meat these days. The new recipe, Chicken Supreme Pasta Bake, was definitely a hit.
The combination of chicken, pasta, tomatoes, garlic, onion, green peppers, mushrooms, greek yogurt and two kinds of cheese is absolutely scrumptious. The only thing that annoyed me while making this recipe was that darn dog Chloe jumped up on the counter and ate some of the chicken while my back was turned. Luckily I had an extra breast already thawed out to take its place. Whew!
The dish only took about 25 minutes to bake, too, which is always a plus. Frankly, it probably took more time to get all the ingredients ready than it did to actually bake. It could really be an easy weeknight meal if I got everything prepped in advance and just had to throw it together when I get home from work. It also makes great leftovers during the week – a 9×13 pan makes a lot of Chicken Supreme Pasta Bake.
It also will go on the list of new favorites, as it got a thumbs-up from everyone in the house, including darn dog Chloe.
